Make Sunday Funday a Little More Fun
What do I love more than champagne?! Okay, maybe it’s a tie, but weekend mimosas – that’s what!
A couple of weeks ago, I had this Dreamsicle mimosa at M.A.D.E that was pretty amazing and the inspiration for this champagne cocktail concoction. This past Sunday was my hubs birthday and before celebrating with some birthday donuts, we toasted to this fun, little mimosa!
I added a little something extra to make the orange flavor in these really pop!
Orange Creamsicle Mimosa
2 parts champagne
1 scoop of orange sherbet
1 scoop vanilla ice cream
1 part orange juice
Pour champagne and orange juice into a larger champagne glass (a balloon wine glass would work perfectly as well). Add one scoop of orange sherbert followed by a scoop of vanilla ice cream. Grate fresh orange zest over vanilla ice cream for the perfect touch!
I used Trader Joe’s North Coast Reserve Brut for its dry, yet refreshing taste that contrasts with the sweetness of the ice cream and sherbert (this is one of my five favorite toasting champagnes). Together it makes for a mimosa you will be craving all week long!
The vanilla ice cream makes this mimosa nice and frothy and, surprisingly, not too sweet or filling. This orange creamsicle mimosa is a great way to make your weekend a little more special. It made for the perfect start to Andy’s birthday. The orange zest makes it so refreshing and balances nicely with the sherbert and orange juice (plus it makes it look extra fancy)!
What better way to treat yourself this weekend than with this yummy little treat (calories don’t count on the weekend, right?!)
Bubbly Wife Tip: grate the orange zest over a small bowl and place carefully over ice cream. It helps with the presentation rather than trying to grate the zest over your champagne glass.
Enjoy loves! Cheers – the weekend is so close and I have a feeling we might be making these again very soon.
